Purple Sweet Potato Smoothie Bowl

Hi friends!

This is one of my favorite smoothie bowls, so I’m excited to share it! Using purple sweet potato as the main ingredient makes it nice and think so it’s a perfect consistency for a smoothie bowl! It’s perfect for all kinds of fun toppings.

Purple Sweet Potato Smoothie Bowl (makes 2 servings)

Add to blender:

  • 1 large purple sweet potato
  • 1 cup coconut milk
  • 1 banana
  • 1 cup yogurt
  • 2 tbsp almond butter
  • 1 tsp cinnamon
  • 1 tbsp flax seed
  • 1 tbsp chia seed
  • 3-4 pitted dates
  • 3-4 ice cubes

Add on top:

  • a dozen blueberries
  • a sprinkle of coconut flakes
  • a sprinkle of cinnamon

OR, whatever tickles your fancy as a topping! 🙂
